We all love to eat and so did Champlain. The New world to which he came was a land with an abundance of wild life. The forests were full of partridge, duck, pheasant, goose, rabbit, deer, moose, beaver, and bear, and the seas were teaming with, cod, mackerel, and haring to mention the least. Vegetables were grown in gardens during the summer season. Champlain could use all that this new land had to offer in recipes that came from France, his homeland.
